Tortellini with ham and cream

Ingredients for 4 people

  • 500 g fresh tortellini
  • 200 g cooked ham
  • 25 g butter
  • 125 ml cream
  • 60 g grated parmesan
  • Freshly ground black pepper


Preparation

  • Remove the fat from the ham and cut slices into cubes. Melt the butter in a pan and sauté the ham for a few seconds.
  • Add the cream and mix, heating for a few minutes. Add pepper and a spoonful of grated parmesan and remove from the heat.
  • Drain tortellini, and mix them in the pan with the hot sauce. Top with a handful of grated parmesan and pepper.


Cavatelli with beans

Ingredients for 4 people



400 g cavatelli

  • 250 g beans
  • 300 g red pepper
  • Celery
  • Garlic
  • Basil
  • Carrot
  • Olive oil
  • Salt
  • 100 g bacon

Preparation

  • Boil the beans with the celery and carrot. Roast the peppers, cut into pieces. Sauté the garlic and bacon in oil and add the beans. Cook the cavatelli in the liquid from the beans. Let the water cook down and add the basil.

Trofie with mussels and courgette

Ingredients for 4 people

  • 400 g trofie
  • 3 courgettes
  • 1 kg mussels
  • Garlic
  • Saffron
  • Olive oil
  • Salt and pepper


Preparation

  • Boil the beans with the celery and carrot. Roast the peppers, cut into pieces. Sauté the garlic and bacon in oil and add the beans. Cook the cavatelli in the liquid from the beans. Let the water cook down and add the basil.


Tagliolini with shrimp and rocket

Ingredients for 4 people

  • 400 g tagliolini
  • 300 g shrimp
  • 300 g cherry tomatoes
  • Handful of rocket, chopped
  • Oil
  • Salt and pepper
  • Onion

Preparation

  • Sauté onion in olive, add the tomatoes and cook for 10 minutes. Add the shrimp, cleaned and cut into small pieces. Add the rocket and sauté everything for a few minutes. Cook the tagliolini and sauté everything together for a few minutes.


Paccheri ai frutti di mare

Ingredients for 4 people

  • 400 g paccheri
  • 300 g squid
  • 300 g mussels
  • 200 g shrimp
  • 100 g breadcrumbs
  • Olive oil
  • 1 dl white wine
  • Parsley, cayenne pepper
  • Garlic

Preparation

  • Wash the mussels, shrimp, and squid under running water, peel and set aside. Sauté the squid in the oil, add the white wine, and salt. After a few minutes, add the shrimp and then the mussels after 5 minutes. Mix the paccheri with the sauce. Add the garlic sautéed in oil with the parsley and bread crumbs.
